Waikato-Tainui approached AgResearch to run a series of Marae-based workshops focused on meat processing and associated aspects as part of their Marae development programme launched in 2021. The first wānanga concentrated on the processing and the nose-to-tail utilization of sheep, and the second dealt with similar aspects of beef processing and utilization.
