This project addresses value addition for the meat industry to improve returns for processors. The intended outcome is an increased range of potential applications for under-utilised abattoir co-products, offal and off-cuts. The approach is to design schemes to ferment these raw materials, and convert them to novel, flavoursome extracts, sauces and cuisine ingredients.
