Weight loss in lamb carcasses: Causes and guidelines for reduction

Unprotected lamb carcasses lose weight during cooling, freezing, cold storage and transport. Recent MIRINZ surveys have shown more clearly how and why weight loss occurs and how it can be reduced.

This Bulletin explains weight loss in lamb carcasses wrapped in stockinet, offers some comparisons with carcasses in plastic wrap, and provides guidelines on reducing loss.
