Lipid profile of New Zealand sheep milk

Lipids are a diverse range of compounds generally regarded as fatty acids and their derivatives plus substances related biosynthetically or functionally to these compounds. Dietary lipids, like many other natural compounds, have a profound effect on human development, health and even modd at different life stages. Some dairy lipids such as sphingomyelin (SM) are associated with gut health, while others (e.g., gangliosides) have immune functions such as helping to maintain resistance to infections.Because of these and other properties, it has been said that "lipids are in many ways the most important of the biomolecules because they are the ultimate controllers and regulators of our bodily processes".
